Small in size, but rich in flavor, this bite sized smoked whitefish salad cracker melts punch above their weight when topped with sharp pimento cheese spread. Make sure that you make enough. This down South spin on the classic smoked whitefish salad melt will have your party guests asking for more. This delicious smoked fish appetizer is equally good prepared from smoked salmon salad as it is from smoked whitefish salad. If you want to add a little more smoked fish into the mix, supplement any of our prepared salads with a hand-flaked piece of our hot smoked salmon, smoked trout, or smoked whitefish.
Preheat oven to 500°F/broil.
Place crackers on a sheet tray.
Mix the smoked whitefish salad and celery together.
Put 1 teaspoon of whitefish salad in the center of each cracker, and top with ½ teaspoon of pimento cheese. Broil for 1 minute, or until warm and the cheese begins to melt. Remove from tray and let cool.
Garnish with a piece of sliced pickle on top, and a dash of hot sauce, as you’d like.
