Mike's Hot Honey Smoked Salmon and Melon Salad

Directions

In a large salad bowl whisk together olive, lime juice, hot honey, and season with salt and pepper.  Toss honeydew and cantaloupe in the vinaigrette and evenly coat. Gently fold in baby arugula or spring mix. Spread salad onto a large platter. 

Remove the Mike’s Hot Honey Nova smoked salmon from the package and cut each slice in half. Arrange the smoked salmon slices evenly over the salad. Top with goat cheese crumbles. 

Serve chilled.
