Just as we’ve done for over 100 years, we trim the finest Atlantic salmon by hand, season the filets with just enough salt, then lightly smoke them in single batches over a blend of North American hardwoods. 


True to our tradition and to the celebrated Nova style, we ensure that the temperature of the smokehouse never exceeds 90°F—preserving the succulent, buttery texture of the fish, while enhancing its natural complexity and delicate flavor. What results is a bite that’s subtle, savory, and utterly indulgent. 


On its own, Nova is pretty much the purest form of a smoked fish treat. But tucked into a Benedict or draped on top of rye with cream cheese, capers, and red onion? Perfection.

FAQs

Lox, smoked salmon. Tomato, tomahto? Not quite. While the two names are used interchangeably, especially here in the United States, lox is different from smoked salmon. When prepared authentically, lox is cured in salt and not, in fact, smoked at all. Although this delicacy takes on a silky texture that resembles cold-smoked salmon, it stands on its own two fins thanks to its singularly salty flavor.

Delicious....

I love buying direct. Prices are great. Food is so delicious and fresh, and the array of products I can try are so much better than what one finds in markets that carry Acme products. I only wish you had a cold truck on an L train stop so I could get off, pick up my order, then turn right around and head home. When my order is large, or I am also picking up for some of my neighbors, I would take my car. But congestion pricing put an end to that. Please keep up the great work.

Delicious!

Just had a birthday celebration for my mom (87). Sable, nova, smoked trout, 2kinds of herring, white fish salad, hot smoked salmon. Everything was really wonderful. The smoked trout was something different and excellent. Wish the smoked salmon was cut into smaller pieces (fewer bones) but the flavor was perfect. A perfect spread! Thank you ❤️
