Directions

In a medium bowl, mash the avocado until smooth. Add lime juice, cilantro, and salt. 

While whisking slowly drizzle in oil until emulsified. Set aside. 

In a large, combine romaine, corn, tomatoes, and black beans.

Add vinaigrette and gently toss to combine. 

Plate the salad, top with flaked salmon, tortilla strips, and cilantro.

  • ¼ cup fresh cilantro 
  • 2 tablespoons lime juice 
  • ½ cup neutral oil of your choice
  • 1 ½ teaspoons kosher salt
