Directions
Make the smashed avocado by combining all ingredients for that part of the recipe in a bowl and smashing and mixing with a fork until combined and smooth. Season to taste and remix.
Slice baguette on a bias and brush both sides of the cut bread with oil. Cook for 2-3 minutes per side in a skillet until nice and browned. Alternatively you could bake in the oven for 3-5 minutes. These toasts will be your crostini for topping.
Add a scoop of smashed avocado to each crostini and spread end to end. Top with smoked salmon. Garnish with a few sprigs of dill and pomegranate seeds and arrange on a round plate in a wreath shape. For added holiday flare, add dill around the plate with more pomegranate seeds.
Enjoy!
