Smoked Salmon Couscous Bowl

This Lemon Garlic Hot Smoked Salmon Couscous Bowl is a bright, Mediterranean-inspired dish that’s as nourishing as it is flavorful. Tender pearl couscous is tossed with juicy cherry tomatoes, crisp cucumber, red onion, and olives, then finished with a creamy lemon-tahini dressing that brings everything together.

Directions

Bring the water to a boil in a large saucepan, season with salt. 

Add couscous, reduce to a medium boil for 10 minutes. Stirring occasionally until al dente. 

Drain if needed, transfer couscous to a bowl. Toss with olive and cool. 

In a small bowl, whisk together tahini, lemon juice, zest, olive oil, honey, salt and water until smooth. 

Once couscous is cooled, fold in tomatoes, cucumber, onion, and olives. 

Add dressing, gently mix to combine.

Divide into bowls top with flaked salmon, herbs and almonds. 

Serve and enjoy!

  • ¼ cup black or Kalamata olives, chopped 
  • 1 tablespoon olive oil 
  • ½ tablespoon kosher salt

Lemon-Tahini Dressing: 

  • ¼ cup tahini 
  • 3 tablespoons lemon juice 
  • 1 tablespoon lemon zest 
  • ¼ cup olive oil 
  • 1 tablespoon honey 
  • 1 tablespoon kosher salt 
  • 2 tablespoons water

Garnish:

  • Dill
  • Mint
  • Toasted almonds
