Smoked Salmon and Goat Cheese Sandwiches

Directions

Make the goat cheese spread by combining all the ingredients in a bowl and mixing by hand for a bit of a chunkier spread, or transfer to a food processor and blend until smooth. Season to taste.

Slice ciabatta and brush with olive oil. Add more oil to a skillet and add slices of bread. Cook for about 2-3 minutes per side on medium heat until crispy and browned.

Add goat cheese spread in an even layer and top with large flaked pieces of the Lemon Garlic Smoked Salmon. Top with a handful of arugula and slices of tomato. Season tomatoes with sea salt, pepper and a sprinkle of red pepper flakes (optional). Close sandwich, slice, and enjoy!
