Lemon Garlic Smoked Salmon Pita

This pita sandwich offers a blend of healthiness and heartiness, featuring a diced cucumber salad paired with lean hot smoked salmon—a Mediterranean-inspired meal perfect for any time of day. Diced cucumbers, grape tomatoes, and red onion are tossed in olive oil, red wine vinegar, and lemon juice, then combined with our Lemon Garlic Hot Smoked Salmon, all nestled in a pita and garnished with tzatziki. Directions

To make Tzatziki, mix the cucumber with ½ tablespoon salt and let sit for 5 minutes. Drain excess moisture, then add to a bowl along with the garlic, yogurt, pepper, and herbs. Mix until combined.

 To make the salad, add all ingredients to a bowl and gently mix. Taste and add more salt if needed.

 Combine salad, hot smoked salmon, and tzatziki to pita.

For the tzatziki

  • 1 Garlic clove grated
  • 1 Medium cucumber, peeled and diced
  • 2 cups Plain Greek yogurt
  • ¼ teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 2 tablespoons Chopped mint
  • 2 tablespoons Chopped parsley

For the cucumber salad

  • ½ Medium cucumber
  • 2 cups Grape tomatoes, halved
  • ½ Small red onion, thinly sliced
  • ½ cup Parsley chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice or red wine vinegar
  • ½ tablespoon Kosher salt
