Whether you’re cooking for company or just craving something cozy and craveable, this dish proves that great meals start with great ingredients—and a little curiosity in the kitchen.
Salt a large pot of water to taste. Bring the pot of water to a boil over high heat. Once boiling, add pasta and cook according to instructions.
Melt the butter in a skillet over low-medium heat. Add olive oil to the butter and combine. Add onion and sauté until soft and translucent, stirring occasionally.
When the pasta is about 90 seconds from al dente, add the frozen peas to the pot with the boiling pasta.
When the pasta has finished cooking, strain the pasta and the peas, but reserve a half a cup of the pasta water.
Add the pasta water to the skillet with the onion. Turn up the heat to medium. Once the water has reduced slightly (roughly 2 minutes), grate parmesan to taste into your building sauce. Add the pasta and peas and stir to coat the pasta in the sauce mixture.
Transfer the pasta to 2-4 dishes. Grate fresh parmesan over the top. Add parsley evenly over each. Top with Acme Smoked Fish Lemon Pepper Smoked Salmon.
Enjoy!
