Acme’s rainbow trout is sourced from the cool, flowing, fresh waters of Denmark, which produce some of the finest commercially available rainbow trout in the world. After harvest from these crystalline waters, our trout arrives in peak condition, and the meat has a notable springiness once filleted, a key indicator of quality for this smaller, lighter-fleshed relative of the salmon.

 

After a quick brine, these trout fillets are hot smoked to attain a beige-amber hue, as well as a slightly sweet, superbly smoky flavor. What was once a seasonal delicacy is now a sustainable year-round offering, owing to modern advances at the frontier of freshwater aquaculture.
