To keep with tradition, we add a trace amount of wine to every batch of our pickling brine. This wine is quickly absorbed by the vinegar present in the mixture, so there’s absolutely no alcohol detectable in this delicacy.

This is the best herring in wine i've had. Many are too salty, or the herring just tastes like vinegar, but not this one. Perfectly salty, you can actually taste the herring. The vinegar is nice, but not overpowering. I love the onions. I eat this at least once a week.
