A silky smoked salmon that sings with everything bagel flavor? It’s simple. Simply delicious, anyway. It all starts with the finest Atlantic salmon, which we trim by hand, season with just enough salt, then lightly smoke in single batches over a blend of North American hardwoods.
After a stretch in our smokehouse—which never exceeds 90°F—we coat the filets in a beloved blend of sesame, garlic, onion, and poppyseed. What results is a flavor-packed smoked fish that’s equal parts appetizing counter and bagel shop.

When prepared authentically, lox is cured in salt and not, in fact, smoked at all.
