What’s the difference between Acme Smoked Fish and Blue Hill Bay Smoked Fish products?
Both Acme and Blue Hill Bay smoked fish products are made from the finest raw materials. Acme Smoked Fish are brine cured in a solution of salt and sugar, then smoked to produce a traditional “New York-Style” flavor. Blue Hill Bay products are dry-cured in the European tradition by hand rubbing the fish with a mixture of salt and sugar before smoking. The Blue Hill Bay products are then smoked over a blend of Adirondack fruit and hard woods.

Are all Acme and Blue Hill Bay products certified Kosher?
All of our smoked fish products are kosher except sturgeon.

Are all Blue Hill Bay products all-natural and preservative-free?
Blue Hill Bay Chunky Whitefish Spread and Blue Hill Bay Baked Salmon Spread contain mayonnaise, which may contain preservatives.

How long can smoked fish safely sit at room temperature?
When serving smoked fish, do not allow it to remain at room temperature (for example, as part of a buffet) for more than three hours.

How long can I store smoked fish?
Once opened, fresh and vacuum-packaged smoked fish should be consumed within seven days. The shelf life of un-opened, vacuum-packaged smoked fish varies. Vacuum-packaged salmon, for example, if kept refrigerated and un-opened, can be enjoyed up to 14 days after purchase. Smoked fish, because it is a ready-to-eat food, should not be stored with raw food products, nor should it be served or prepared along with raw products.

Is it O.K. to freeze smoked fish?
Fresh and vacuum-packaged cold smoked fish can be frozen for up to one month. Re-freezing smoked fish is not recommended, as it adversely affects the quality of the product, causing the fish to lose color, moisture and texture.

Frozen smoked fish should be thawed in a refrigerator at 40ºF or below.
