Pizza with Gravlax, Goat Cheese, and Arugula

Description

This thin-crust pizza is delightfully prepared with gravlax salmon, complemented nicely with goat cheese and arugula.

Ingredients

8 slices
pumpernickel bread (toasted)
2⁄3 cups
low fat greek yogurt
1  
roasted red bell pepper (sliced thin)
2  
acme gravlax smoked salmon (4oz)
1  
small cucumber (thinly sliced, lengthwise (a peeler is perfect for this))

Instructions

Shape the dough into an oblong crust.  Brush a sheet pan with olive oil and dust with cornmeal.  Place the dough on the baking sheets and spread with arugula and sprinkle with goat cheese.  Lay gravlax on top and garnish with lemon zest.

Bake the Pizza crust at 350˚F in the oven for 10-15 minutes. Remaining ingredients arranged on the crust once it is baked.
