This traditional delicacy is made with lox or cold smoked salmon. We prefer to use smoked salmon. Try any of Acmes cold smoked salmon options, including our lemon peppered smoked salmon, gravlax style, and pastrami style. One can enjoy this adventurous meal at any time of the day!


2 tablespoons
Large Eggs
1⁄4 cup
heavy cream or whole milk
1 pinch
freshly ground pepper
4 ounces
cold smoked salmon (thinly sliced)


In a large size pan melt the 2 tablespoons of butter under medium heat. In a one mixing bowl slowly mix the 6 eggs and the milk or cream together. Here take a pinch of pepper and add to the mix. In another mixing bowl chop one avocado into small dice sized pieces. Next gently add the egg mixture into the Large sized pan. Stir for about two minutes. When the eggs are almost done place the smoked salmon of your choice into the pan. Let cook until salmon is a warm temperature throughout. Then add the sliced avocado. Finally, scoop the eggs onto your bread of choice and enjoy! (hot buttered rye bread or baguette suggested)
