Customers and Vendors
Our customers are an extension of the products that we sell in many ways. A variety of the smoked fish products that Acme produces are sold anonymously in premier retail and food service establishments in New York and around the country.
When you think of traditional, premier New York retail establishments specializing in smoked fish, Zabars is high on that list. Mr. Saul Zabar (right) and his assistant Tomas Rodriguez (left) make their weekly appearance on the Acme premises to hand select smoked fish that meets Saul's discriminating taste. The Acme-Zabars relationship has flourished over many years giving both parties a tremendous opportunity to learn from each other.
Chef David Burke is proud of his partnership with Acme Smoked Fish Corporation. Acme produces Chef Burke’s signature pastrami salmon, perhaps his most famous food “invention.” The pastrami salmon features the flavors typically reserved for beef, such as pepper, coriander, and paprika that, when combined with top-quality salmon, produce a unique and tasty flavor profile. Chef Burke entrusts Acme with his recipe and his reputation, and the result is nothing short of delicious.
Zucker’s Bagels & Smoked Fish is home of the authentic NYC hand-rolled bagel. Known for its traditional “made on the premises,” hand-rolled, kettle-boiled bagels, Zucker’s also offers an extensive variety of smoked fish. This has been possible through a 16-year partnership with Acme that is founded on quality and inspires everything both partners do. (Image: Matt Pomerantz)

Kenny and Ziggy's New York Delicatessen Restaurant
Authenic is the key word when talking about Kenny and Ziggy's New York Delicatessen Restaurant in Houston, Texas. Yes, Texas. It is run by Ziggy Gruber, the chef, native New Yorker and third-generation "deli maven," whose grandfather opened the first Jewish deli on New York's Broadway. In fact, the Grubers have been doing business with Acme Smoked Fish for three generations! Why? "Because they have the best fish around, and they are like family," says Gruber. Acme Smoked Fish Corporation has partnered with Kwik'Pak on several occasions to bring products that are unique to Alaskan fisheries dotting the Yukon River, like Bering Ciscoes and Yukon Keta Candy. This fishery enables Eskimo communities, especially the Yupik families, to continue their traditional lifestyle practiced for thousands of years. Community-owned Kwik'pak Fisheries was founded in 2002 to provide economic stability to the local community.
For more than 50 years, Alaskan Fisheries have adopted strict standards that ensure our pristine waters and ecosystem are sustained for future generations. Alaska has been a role model for fisheries management around the globe. Many of Acme's wild-caught fish species come from Alaska, including all of it's wild-caught salmon (King, Sockeye, Coho, and Keta), sablefish, and Bering ciscoes.
